  • Place optional vegetables in a roasting pan. Set the lamb on top of the vegetables.

  • Pour broth into the roasting pan. Cover with foil and roast for 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare. Remove foil for the last 30 minutes to create a crispy, golden crust.

  • Let the lamb rest for 15–20 minutes before slicing. This keeps the meat tender and juicy.
