As the holidays draw near, I find myself reaching for cinnamon and vanilla before I even think about turkey or trimmings. There’s just something about baking that feels like love in its purest, most comforting form.


But for those living with diabetes — or anyone trying to cut back on sugar — the dessert table can be a mix of temptation and hesitation. Over time, I’ve learned that we don’t have to miss out on sweetness; we just have to reimagine it.


This year, I’m sharing a few of my favorite diabetic-friendly desserts — simple, satisfying, and festive enough to earn a place beside the pies and cookies. Because everyone deserves a little treat, especially during the holidays.

Pumpkin Cheesecake Cups (Sugar-Free and Simple)


Serves: 10–12 mini cups

Prep Time: 15 minutes

Cook Time: 20–22 minutes

Chill Time: 1 hour

Total Time: About 1 hour 40 minutes


Rich and velvety with just the right amount of spice, these mini pumpkin cheesecakes make a perfect make-ahead dessert for cozy gatherings.


Because what’s Thanksgiving or Christmas without a little pumpkin spice? These mini cheesecakes have all the creamy richness you crave, but none of the sugar spike.


Ingredients:

• 8 oz cream cheese (softened)

• ½ cup pure pumpkin puree

• 1 egg

• ¼ cup granulated erythritol or stevia blend

• 1 teaspoon pumpkin pie spice

• ½ teaspoon vanilla extract


Instructions:

  • Preheat oven to 325°F (160°C). Line a muffin pan with paper liners.

  • Beat the cream cheese until smooth. Add pumpkin, egg, sweetener, vanilla, and spice.

  • Spoon evenly into liners (about 2 tablespoons each).

  • Bake 20–22 minutes, until centers are just set.

  • Cool completely, then refrigerate.

📌 Top with sugar-free whipped cream and a sprinkle of cinnamon. They’re festive, creamy, and just sweet enough to feel indulgent — without guilt or glucose spikes.



Coconut Almond Snowballs (Low-Carb, No Added Sugar)

Light, sweet, and delicately nutty — these coconut almond snowballs are the perfect no-bake bite for a sugar-conscious celebration.


Coconut Almond Snowballs (Low-Carb , No Added Sugar)


These are little bites of coconut bliss — soft, chewy, and perfectly sweetened with monk fruit or stevia. They’re gluten-free, keto-friendly, and pair beautifully with an afternoon coffee or after-dinner tea.


Ingredients:

• 1 ½ cups almond flour

• ¾ cup unsweetened shredded coconut (plus a little extra for rolling)

• 3 tablespoons coconut oil (or butter)

• 3 tablespoons monk fruit or erythritol sweetener

• 1 teaspoon vanilla extract

• A pinch of sea salt


Instructions:

  • In a bowl, combine almond flour, shredded coconut, and salt.

  • Add coconut oil, sweetener, and vanilla. Stir until the dough holds together when pinched.

  • Roll into 1-inch balls and coat lightly in shredded coconut.

  • Chill for 30 minutes before serving.

They look like tiny snowballs, taste like a dream, and disappear faster than you’d expect.
