Instructions:

1. In a mixing bowl, gently combine the drained tuna, white beans, and chopped red onion.

2. Drizzle with olive oil and lemon juice. Add salt and pepper to taste.

3. Stir in fresh parsley (or a sprinkle of dried herbs) and gently fold everything together to keep some texture.

4. Toast slices of rustic bread until golden.

5. Spoon the tuna and bean mixture generously onto the warm toast.

6. (Optional) Rub a garlic clove over the toasted bread before topping for extra flavor.
