Creamy French Chicken in Mustard Sauce

Ingredients:

  • 4 boneless chicken thighs or breasts (skin-on optional)

  • Salt and freshly ground black pepper

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • 1 small onion or 2 shallots, finely chopped

  • 2 garlic cloves, minced

  • 2 teaspoons Dijon mustard

  • 1 tablespoon whole grain mustard (optional, for texture)

  • 100 ml dry white wine (or chicken stock)

  • 200 ml heavy cream

  • Fresh thyme or chopped parsley for garnish


Instructions:

1. Prep the chicken

Pat the chicken dry and season generously with salt and pepper on both sides.


2. Sear to golden perfection

Heat olive oil and butter in a large skillet over medium heat. Add the chicken and cook 4–5 minutes per side until golden and nearly cooked through. Transfer to a plate and set aside.


3. Build the flavor base

In the same pan, add the chopped onion or shallots. Sauté for 2–3 minutes until soft and translucent. Stir in the garlic and cook for 30 seconds until fragrant.


4. Deglaze & add mustard

Pour in the wine to deglaze the pan, scraping up all the flavorful bits. Let it simmer for 2–3 minutes to reduce slightly. Then whisk in both mustards.


5. Creamy finish

Lower the heat and pour in the cream. Stir gently to combine into a silky sauce.


6. Simmer & serve

Return the chicken to the pan. Simmer gently for another 6–8 minutes until the chicken is fully cooked and coated in the sauce. Adjust seasoning to taste.


7. Garnish and enjoy

Sprinkle with fresh thyme or chopped parsley and serve immediately.
