Ingredients:
2 racks of lamb (about 1 ½ to 2 lbs each), trimmed (French-style if possible)
3 tablespoons olive oil
5 cloves garlic, minced
1 tablespoon Dijon mustard
3 tablespoons fresh rosemary, finely chopped
2 tablespoon fresh thyme leaves
Optional: ½ cup breadcrumbs (or almond flour for low-carb)
1 teaspoon sea salt
½ teaspoon black pepper
Zest of 1 lemon

Instructions:
1. Preheat the oven to 425°F (220°C). Line a baking sheet with foil or parchment.
2. Season the lamb racks with salt and pepper on both sides.
3. Heat olive oil in a skillet over medium-high heat. Sear each rack for 2–3 minutes per side until golden brown. Remove from heat.
4. Mix garlic, Dijon mustard, rosemary, thyme, breadcrumbs, and lemon zest in a small bowl.

6. Roast in the oven for 20–25 minutes for medium-rare (or until the internal temperature reaches 135°F / 57°C).
