The Recipe: Homemade Chicken Liver Pâté


Serves: 6-8

Ingredients:

  • 1 pound chicken livers, cleaned

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 4 tablespoons unsalted butter

  • 1 teaspoon fresh thyme, chopped

  • 1/4 cup cognac or brandy

  • Salt and pepper to taste

  • 1/4 cup heavy cream

  • 👩‍🍳Optional: for a hint of spice, add a pinch of Sichuan pepper


Instructions:

  • Sauté the Aromatics: In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and garlic, cooking until soft and translucent, about 5 minutes.


  • Cook the Livers: Add the cleaned chicken livers to the skillet, cooking until they are browned on the outside but still slightly pink inside, about 5-7 minutes. Stir in the thyme, salt, and pepper.


  • Deglaze with Cognac: Carefully add the cognac to the pan, scraping any browned bits from the bottom. Allow the mixture to simmer for 2-3 minutes until the alcohol evaporates.


  • Blend the Mixture: Transfer the liver mixture to a food processor. Add the remaining butter and heavy cream, blending until smooth and creamy. Taste and adjust seasoning as needed.


  • Chill and Serve: Transfer the pâté to a serving dish, smoothing the top. Cover and refrigerate for at least 2 hours, allowing the flavors to meld.
