This is the kind of dish that rewards patience. Gently mixed meat, properly browned, then finished in a smooth, well-balanced gravy that clings to every bite. Nothing heavy, nothing rushed — just classic cooking that delivers warmth, depth, and satisfaction every single time.

Succulent Meatballs with Silky Smooth Gravy


Serves: 4

Ingredients:

  • 500 g minced beef or beef & pork blend

  • 1 small onion, finely grated

  • 2 garlic cloves, finely grated

  • 1 egg

  • 50 g breadcrumbs

  • 60 ml milk

  • 1 tsp Dijon mustard

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (optional)

  • 1 tbsp finely chopped parsley (optional)

  • 1 tbsp oil + 1 tbsp butter


Gravy

  • 1 tbsp butter

  • 1 tbsp flour

  • 600 ml beef stock

  • 1 tsp Worcestershire sauce (optional)

  • 80–120 ml cream

  • Salt and pepper, to taste

Method:

  • Combine breadcrumbs and milk and let soak for a few minutes.

  • Add mince, onion, garlic, egg, mustard, seasoning, parsley, and soaked breadcrumbs. Mix gently until just combined.

  • Shape into evenly sized meatballs.

  • Heat oil and butter in a wide pan and brown meatballs on all sides.

  • Remove and set aside.

  • In the same pan, melt butter, add flour, and cook for 1 minute.

  • Gradually whisk in stock until smooth and glossy.

  • Stir in Worcestershire sauce and cream. Season to taste.

  • Return meatballs to the pan and simmer gently for 10–12 minutes until cooked through.

Serve with smooth French potato purée to absorb the gravy and balance the richness.
