Olive Crumble

Makes: about 1 cup

Prep Time:10 minutes

Baking Time: 20-25 minutes


Ingredients:

- 1 cup pitted olives Kalamata olives, finely chopped

- ½ cup breadcrumbs (preferably homemade or panko for extra crunch)

- 1 tablespoons olive oil

- 1-2 cloves garlic, minced

- Fresh herbs (like parsley or thyme), finely chopped (optional)


Preparation:

Preheat the oven to 350°F/175°C/160° Fan


Mix Ingredients in a bowl, combine the chopped olives, breadcrumbs, olive oil, minced garlic (if using), and fresh herbs. Mix well until everything is evenly coated. Season with pepper to taste.

Spread the mixture evenly on a baking sheet lined with parchment paper.

Bake in the preheated oven for about 20-25 minutes, or until the crumble is golden brown and crispy. Stir halfway through to ensure even cooking.

Remove from the oven and let it cool slightly before using. Sprinkle over your dishes for a flavorful crunch!
