Whether it’s a rainy Sunday or an impromptu craving for warm chocolate chip cookies, I always like to be prepared to bake at a moment’s notice. Over the years, readers and cooking class students have often asked me: “What do you always have in your pantry for baking?” So today, I’m opening the cupboard doors and giving you a peek inside.


This list includes my essential pantry ingredients that make spontaneous baking not only possible, but deeply satisfying. And yes—quality matters, even for a quick bake!


My Must-Have Pantry Staples for Spontaneous Baking

✔️All-Purpose Flour (Unbleached)

This is the foundation of most baked goods. I always go for unbleached all-purpose flour for better texture and less processing.


✔️Baking Powder & Baking Soda (Fresh and Active!)

Check the expiration date! Fresh leaveners make the difference between a fluffy bake and a flat one.


✔️Granulated and Light Brown Sugar

I keep both on hand—white sugar for structure and caramelized brown sugar for moisture and flavor.

This one is non-negotiable. I use a real, pure vanilla extract or, when available, my homemade vanilla made with vanilla beans and vodka.

Warm spices instantly transform simple dough into something cozy and irresistible. Freshly ground if possible!
