When the sun is shining and ripe tomatoes are at their peak, nothing beats a fresh Mediterranean salad bursting with flavor. This vibrant Tomato, Za’atar, and Sumac Salad brings together juicy tomatoes, fragrant herbs, and a tangy dressing with a hint of sweetness from pomegranate molasses. It's a simple, healthy, and absolutely mouthwatering dish that pairs beautifully with grilled meats, fish, or a Mezze platter. Perfect for easy entertaining or a refreshing side at your summer table!


Mediterranean Tomato, Za'atar, and Sumac Salad Recipe


Serves: 4-6

Prep Time: 10 minutes


Ingredients:

  • 3 large ripe tomatoes, cut into wedges (about 400g)

  • 400g cherry tomatoes, halved

  • 1 small red onion, finely chopped (70g)

  • 15g fresh flatleaf parsley, finely chopped

  • 1 tablespoon sumac, plus extra for garnish

  • 3 tablespoons extra virgin olive oil

  • 1 teaspoon lemon zest

  • 2½ tablespoons fresh lemon juice

  • 1 tablespoon pomegranate molasses

  • 1½ teaspoons sea salt

  • 15g fresh za'atar leaves (or oregano), roughly chopped

  • 40g pomegranate seeds


Preparation:

1. In a large mixing bowl, combine the ripe tomatoes, cherry tomatoes, finely chopped red onion, fresh parsley, and the tablespoon of sumac.


2. In a separate small bowl, whisk together the olive oil, lemon zest, lemon juice, pomegranate molasses, and sea salt until well combined.


3. Pour the dressing over the tomato mixture and gently toss to coat all the ingredients evenly.


4. Add the freshly chopped za'atar or oregano leaves and give it another light mix.


5. Transfer the salad to a serving platter. Finish by scattering the pomegranate seeds on top and sprinkling a little extra sumac for a burst of color and flavor.


6. Serve immediately or let the salad sit for 10–15 minutes for the flavors to meld together beautifully.
