King Prawns in Lime, Garlic, and Herb Butter

Ingredients:
1 lb (500g) large king prawns (raw, peeled, deveined, tails on for presentation)
6 tbsp unsalted butter
3 tbsp olive oil
5 cloves garlic, minced
Zest and juice of 2 limes (plus extra lime wedges for serving)
2 tbsp fresh parsley,finely chopped
2 tbsp fresh cilantro, finely chopped
1 tsp red chili flakes (optional, for a bit of heat)
Salt and freshly cracked black pepper to taste
Preparation::
1. Prepare the prawns:
Rinse the prawns under cold water and pat them dry with a paper towel. Season lightly with salt, pepper, and smoked paprika.
2. Make the garlic butter:
In a large skillet, heat the olive oil over medium heat. Add the butter and allow it to melt, combining with the oil. This prevents the butter from burning. Stir in the minced garlic and chili flakes (if using). Sauté for 1-2 minutes until fragrant but not browned.
3. Cook the prawns:
Increase the heat to medium-high and add the prawns to the skillet in a single layer. Cook for 1-2 minutes on each side until they turn pink.
4. Add the lime and herbs:
Lower the heat slightly and pour in the lime juice and zest. Toss the prawns in the limey garlic butter sauce to coat. Sprinkle with parsley and cilantro. Stir gently for another minute to combine all the flavors.
5. Serve immediately:
Transfer the prawns to a serving dish, drizzle with the pan sauce, and garnish with extra lime wedges and a sprinkle of fresh herbs. Serve with crusty bread, steamed rice, or over a bed of pasta to soak up the luscious sauce.

Use raw prawns for the best flavor and texture.
Don’t overcrowd the skillet—cook in batches if necessary.
Adjust the chili flakes to suit your spice preference or leave them out for a milder dish.
