🍋 A Pudding That Surprises You with Every Spoonful
There’s something about lemon desserts that just hits the spot. Bright, fresh, and never too heavy — especially when they come with a little surprise. This lemon pudding may look simple on top, but as soon as your spoon dives in, it reveals a creamy citrus sauce hiding underneath. Light sponge on top, silky lemon curd below — it’s the kind of dessert you want to eat straight from the baking dish while it’s still warm.

Soft-Set Lemon Pudding with Sauce Beneath

Ingredients
220 g (1 cup) superfine sugar
125 g unsalted butter, softened at room temperature
Zest of 1 lemon, finely grated
4 large eggs, separated, at room temperature
80 g (about ⅓ cup) freshly squeezed lemon juice
75 g (½ cup) plain flour
310 g (1¼ cups) whole milk
Icing sugar, whipped cream or vanilla ice cream to serve
How to Make This Heavenly Lemon Pudding
✅️ Preheat your oven to 170°C (fan-forced). Lightly butter a deep ceramic or glass baking dish (about 2 litres capacity).
✅️ In a large bowl, cream together the sugar, butter, and lemon zest until the mixture turns pale and fluffy.
✅️ Add the egg yolks one at a time, mixing well after each addition.
✅️ Stir in the fresh lemon juice, then sift in the flour and fold it through. Gradually pour in the milk and whisk until smooth. Set aside.
✅️ In a clean bowl, whip the egg whites until they form stiff peaks. Using a large metal spoon or spatula, gently fold the egg whites into the lemon batter in batches, being careful not to deflate the mixture.
✅️ Pour the batter into the greased baking dish.
✅️ Carefully place the dish into a larger roasting pan and pour boiling water into the outer pan until it reaches halfway up the sides of the pudding dish — creating a bain-marie (water bath) for gentle baking.
✅️ Bake for approximately 30–35 minutes, or until the top is lightly golden and firm to the touch. The pudding should wobble slightly — that means a gorgeous sauce has formed
To Serve
✔️ Dust with icing sugar just before serving. Add a swirl of whipped cream or a scoop of ice cream for an irresistible contrast in temperature and texture.
