Ingredients
For the Marinade:
✔ 1 cup Greek yogurt (full-fat for best flavor)
✔ 3 tbsp extra virgin olive oil
✔ 3 cloves garlic, minced
✔ 1 small onion, finely grated
✔ 1 tbsp fresh lemon juice
✔ 1 tsp lemon zest
✔ 1 tsp ground cumin
✔ 1 tsp ground coriander
✔ 1 tsp smoked paprika
✔ ½ tsp dried oregano
✔ ½ tsp ground cinnamon (optional, for depth of flavor)
✔ ½ tsp salt
✔ ½ tsp black pepper
✔ ¼ tsp red pepper flakes (optional, for heat)
✔ 2 tbsp fresh parsley, chopped
✔ 2 tbsp fresh mint, chopped
For the Chicken Skewers:
✔ 1 ½ lbs boneless, skinless chicken thighs, cut into 1 ½-inch cubes
✔ 1 red bell pepper, cut into chunks
✔ 1 yellow bell pepper, cut into chunks
✔ 1 green bell pepper, cut into chunks
✔ 1 small red onion, cut into wedges
✔ 2 tbsp olive oil (for grilling)
✔ Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
For Serving:
✔ Warm pita bread
✔ Greek salad (tomatoes, cucumbers, red onions, feta, and olives)
✔ Tzatziki or garlic yogurt sauce

Preparation:
