One-Pan Chicken Orzo with Feta & Fresh Herbs

Chicken with Orzo and Tomatoes

Serves: 4

Ingredients:

  • 1 tablespoon good quality olive oil

  • 1 red onion, diced

  • 2 garlic cloves, minced

  • 4 chicken breasts

  • 1 cup orzo pasta

  • ½ cup chicken stock

  • 1 tablespoon brandy (optional)

  • 1 tablespoon chopped fresh oregano

  • 1 tablespoon chopped fresh basil

  • Salt & freshly ground black pepper, to taste

  • ½ cup crumbled feta cheese

  • 1 cup cherry tomatoes, halved


How to Make It:

1️⃣ Heat olive oil in a medium pan over medium-high heat.

2️⃣ Sauté onion and garlic until soft and fragrant, about 1–2 minutes.

3️⃣ Add the chicken breasts and cook for about 5–7 minutes on each side, or until fully cooked (internal temp 165°F/74°C). Set aside.

4️⃣ In the same pan, add orzo, chicken stock, brandy (if using), salt, and pepper. Bring to a boil.

5️⃣ Reduce heat and simmer for 8–10 minutes until the orzo is tender. Stir occasionally.

6️⃣ Dice the cooked chicken and return it to the pan along with oregano, basil, and cherry tomatoes. Mix well and heat through.

7️⃣ Finish with a generous sprinkle of crumbled feta. Serve warm.


Serving Suggestions:

🥗 Serve with a crisp Greek salad — cucumber, olives, red onion, and a light lemon vinaigrette.

🥖 Add warm crusty bread or pita on the side to soak up the delicious juices.

🍋 Finish with a wedge of lemon for a fresh, zesty touch.
