  • 500g parsnips, peeled and chopped

  • 1 medium white onion, chopped

  • 2 garlic cloves, minced

  • 1 small potato, peeled and diced (for extra creaminess)

  • 1 liter vegetable or chicken stock

  • 150ml cream (or use coconut cream for dairy-free)

  • 2 tbsp olive oil or butter

  • A pinch of nutmeg (optional)

  • Salt and pepper, to taste

  • Fresh parsley or chives, for garnish


Instructions:

1. In a large pot, heat olive oil (or butter) over medium heat.
