2 cups fresh cherries, pitted and halved
1 tbsp olive oil
1 small shallot, finely chopped
1/2 cup dry red wine (Merlot, Pinot Noir, or Syrah work well)
2 tbsp balsamic vinegar
1 tbsp honey or maple syrup
1/2 tsp fresh thyme leaves (or a small rosemary sprig)
Pinch of salt and freshly ground black pepper

Instructions:
