Spicy Pumpkin Pancakes with Salted Caramel Topping

Get ready for the best autumn breakfast of your life. These pancakes are incredibly fluffy, thanks to the pumpkin purée, and packed with a perfect blend of warming spices. The salted caramel sauce sends them over the top into pure indulgence.

Serves: 4 (makes about 8-10 pancakes)

Ingredients:

For the Pancakes:

  • ​200g (1 ½ cups) plain flour

  • ​2 tsp baking powder

  • ​½ tsp salt

  • ​1 tbsp brown sugar

  • ​1 ½ tsp pumpkin spice mix (or use 1 tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ginger, and a pinch of cloves)

  • ​240ml (1 cup) milk

  • ​1 large egg

  • ​150g (⅔ cup) pumpkin purée (not pie filling!)

  • ​2 tbsp unsalted butter, melted

For the Salted Caramel Sauce:

  • ​200g (1 cup) caster sugar

  • ​60ml (¼ cup) water

  • ​90g (6 tbsp) unsalted butter, cubed

  • ​120ml (½ cup) double cream

  • ​1 tsp flaky sea salt


​How to Make It:

​✔️ Start the Caramel: In a saucepan, combine the sugar and water. Place it over medium heat and stir until the sugar dissolves. Stop stirring, turn the heat up slightly, and let it bubble away until it turns a beautiful amber colour. Swirl the pan occasionally, but don't stir it with a spoon.

​✔️ Finish the Caramel: Once it's amber, immediately take it off the heat and carefully whisk in the cubed butter until it's fully melted. Now, slowly pour in the double cream while whisking constantly (be careful, it will bubble up!). Stir in the sea salt. ✔️ ✔️ Set it aside to cool slightly – it will thicken as it cools.

​✔️ Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, brown sugar, and all your spices.

​✔️ Mix the Wet Ingredients: In a separate bowl or jug, whisk the egg, milk, and pumpkin purée together until smooth. Stir in the melted butter.

​✔️ Combine for the Batter: Pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula until just combined. A few lumps are totally fine – do not overmix, or your pancakes will be tough!

​✔️ Cook the Pancakes: Heat a non-stick frying pan over medium heat and add a tiny knob of butter or a spritz of oil. Spoon about 2-3 tablespoons of batter per pancake into the pan. Cook for 2-3 minutes, or until you see bubbles appearing on the surface and the edges look set.

​✔️ Flip! Flip the pancakes and cook for another 1-2 minutes on the other side until golden brown. Repeat with the remaining batter.

​✔️ Serve: Stack 'em high, drizzle generously with your amazing homemade salted caramel sauce, and enjoy immediately!
