Slow Cooker Braised Cabbage with Apples & Caraway
This is not your grandmother’s soggy boiled cabbage. This is cabbage, reinvented—with sweetness from apples, warmth from garlic and caraway, and a silky, melt-in-your-mouth texture thanks to slow, gentle cooking.
The slow cooker takes over so you don’t have to hover. Serve it with crusty bread, over mashed potatoes, or even with a roast chicken or lentils on the side.
Serves: 4 as a main, 6 as a side
Prep Time: 15 minutes
Cook Time: 4–6 hours on low
Ingredients:
1 medium green or savoy cabbage, cored and thickly sliced
1 large onion, thinly sliced
2 crisp apples (like Pink Lady or Braeburn), peeled and sliced
3 garlic cloves, thinly sliced
2 tbsp olive oil or butter
1 tbsp apple cider vinegar
1 cup vegetable or chicken broth
1 tsp caraway seeds (or cumin seeds as an alternative)
Salt and freshly ground black pepper, to taste
Optional: a pinch of chili flakes for mild heat
Instructions:
1. Layer the cabbage, onion, apple, and garlic into your slow cooker.
2. Drizzle with olive oil, sprinkle over the caraway seeds, and season with salt and pepper.
3. Pour in the broth and vinegar, then give everything a light toss.
4. Cover and cook on low for 4 to 6 hours, until the cabbage is meltingly tender and the flavors have deepened.
5. Taste and adjust seasoning if needed. Drizzle with a little more olive oil or a touch of lemon juice before serving for brightness.
